After this week’s petit mash tutorial I felt that a shepherd’s pie would be perfect to put all this knowledge into use. Shepherd’s pie, or cottage pie as it is now more politically correct to call this type of pie made with beef mince and mashed potatoes, is very restrained for my taste in its traditional form. I mean ok, I have had some really good shepherd’s pie in England that only contained minimum ingredients (potatoes, mince, carrots, celery, peas ), but since I am not in a such a mood lately and I am Greek, I thought that I could definitely pack mine with more vegetables and flavour. The final result is -surprise! surprise!- very tasty indeed and with all these veggies, quite healthy too.
Needless to say that you can make shepherd’s pie with leftover potato mash and meat from a roast or stew and it will still taste gorgeous.

Μετά το μικρό μάθημα περί πουρέ πατάτας σκέφτηκα πως θα ήταν σκόπιμο να σας δώσω μια πολύ κλασική και εύκολη καθημερινή συνταγή της Αγγλικής κουζίνας, δουλεμένη όμως για τα Μεσογειακά μας γούστα. Προκειται για την πίτα του βοσκού, η οποία πολύ συχνά φτιάχνεται με αρνί και όχι με μοσχάρι, και περιλαμβάνει ελάχιστα υλικά (πουρέ, κιμά, καρότα, σέλερι, αρακά). Έχω φάει πολλές καλές τέτοιες πίτες στην Αγγλία, όμως λιγάκι γεύση παραπάνω δεν βλάπτει. Τελικά το πιάτο αυτό εκτός από νόστιμο και χορταστικό, με τόσα λαχανικά που περιέχει, γίνεται και πολύ υγιεινό!
Εννοείται πως η πίτα του βοσκού είναι ένας τέλειος τρόπος να χρησιμοποιήσετε πουρέ που σας έχει μείνει ή κρέας μαγειρευτό/ψητό. Θα γίνει εξίσου νόστιμη και θα έχετε ένα καινούριο φαγητό στο τραπέζι σας.
Μediterranean shepherd’s pie
INGREDIENTS for 6 people
for the potato mash
- 1.5kg potatoes
- 50g butter
- 400ml fresh milk, warm
- 200g ricotta cheese (optional)
- salt
for the beef mince
- 500g lean beef mince
- 500g white mushrooms, sliced
- 1 onion, chopped
- 1 clove garlic, chopped
- 1 tin chopped tomatoes
- 2 grated carrots
- 3 celery sticks, chopped
- 2-3 tbsp chopped parsley
- 200ml wine, white or red
- 1 bay leaf
- salt, pepper, olive oil
DIRECTIONS
- For the mash: follow the instructions on how to make mash here, but using the amounts of butter and milk given above. If you want add the ricotta at the end, mixing it so that it is well incorporated. Set aside.
- For the beef mince: in a deep pan heat the olive oil (3-4 tbsp) and saute the mince until it changes colour (from red to grey). Add the onions and continue cooking until they have started to soften. Pour in the wine, add the tomatoes, veggies and bay leaf and let it simmer for about 30 minutes until most of the liquid has evaporated, about 45 minutes. Finally, add the copped parsley and season well.
- To assemble: spread mince in an even layer at the bottom of a rectangular pyrex dish. Carefully spread the mash on top making sure it has covered the pie and is evenly distributed. You can make decorative designs with the back of a fork if you want.
- Pre-heat the oven to 220 oC and bake pie until golden on top, about 30 minutes. Let it stand before cutting it into portions and serving.
Μια μεσογειακή πίτα του βοσκού
ΥΛΙΚΑ για 6 άτομα
για τον πουρέ
- 1.5 κιλό πατάτες
- 50γρ βούτυρο
- 400μλ γάλα φρέσκο, ζεστό
- 200γρ τυρί ρικότα ή ανθότυρο (προαιρετικά)
- αλάτι
για τον κιμά
- 500γρ άπαχος μοσχαρίσιος κιμάς, περασμένος μία φορά όχι δύο
- 500γρ μανιτάρια φρέσκα, σε φέτες
- 1 κρεμμύδι ψιλοκομμένο
- 1 σκελίδα σκόρδο ψιλοκομμένη
- 1 κονσέρβα ντοματάκι κονκασέ
- 2 καρότα τριμμένα στον τρίφτη
- 3 κλωνάρια σέλερι, ψιλοκομμένα
- 2-3 κ.σ. ψιλοκομμένο μαϊντανό
- 200μλ κρασί λευκό ή κόκκινο
- 1 φύλλο δάφνης
- αλάτι, πιπέρι
ΕΚΤΕΛΕΣΗ
- Για τον πουρέ: ακολουθήστε τις οδηγίες που θα βρείτε εδώ, αλλά με τις αναλογίες βουτύρου-γάλακτος που σας γράφω παραπάνω. Στο τέλος, αν θέλετε, προσθέστε και τη ρικότα, ανακατεύοντας καλά μέχρι να ενσωματωθεί πλήρως στον πουρέ. Αφήστε τον πουρέ στην άκρη.
- Για τη γέμιση: σε ένα βαθύ τηγάνι ή ένα κατσαρολάκι ζεστάνετε σε μέτρια φωτιά το λάδι και σοτάρετε τον κιμά. Μόλις αλλάξει χρώμα (από κόκκινο σε γκρι) ρίχτε το κρεμμύδι, ανακατέψτε και περιμένετε λίγο να μαλακώσει. Σβήστε με το κρασί, προσθέστε την ντομάτα, τα λαχανικά και το φύλλο δάφνης και σιγοβράστε για περίπου 45 λεπτά μέχρι να σωθούν τα υγρά. Στο τέλος προσθέστε τον μαϊντανό και αλατοπιπερώστε.
- Συναρμολόγηση: απλώστε τον κιμά σε ένα πυρέξ ή ταψάκι και βάλτε από πάνω τον πουρέ προσέχοντας να δημιουργηθεί ένα ισοπαχές στρώμα. Με ένα πιρούνι μπορείτε να κάνετε και σχέδια για ομορφιά.
- Προθερμάνετε το φούρνο στους 220 οC και ψήστε μέχρι να ροδίσει από πάνω ο πουρές, περίπου 30 λεπτά. Αφήστε να κρυώσει λίγο και σερβίρετε.

Growing up in Canada, Shepherd’s Pie was/is common fare. I like a few splashes of Worcestershire with the kima. A family fave.
Sounds gorgeous! It’s not political correctness to call it cottage pie though – it’s because shepherds don’t raise beef. Shepherd’s pie is lamb and mutton, cottage pie is beef. Perfect showcase for your mash.

Perfect dish for fall! I have only ever made shepherds pie once I believe, although over here we have many variations when it comes to an ovendish with meat and vegetables, so you could also call those a variation of shepherd’s pie I guess!
