I know that Christmas is really close, not when we put up the tree. That always happens in the beginning of December and Christmas-time still feels far away. I know that it is almost Christmas when I prepare to bake my favourite traditional Greek cookies, melomakarona and kourabiedes, and when I make home made edible gifts to offer to friends and family. I also know that it is Christmas when I start using pomegranates!
I don’t know why that is, but many of the Christmas recipes that appear in Greek food magazines nowadays contain pomegranates in one way or the other. I guess it has to do with the deep symbolism that pomegranates carry in Greek culture. Since ancient times they have been a symbol of abundance, luck, fertility, and life itself. In many areas of Greece a pomegranate is broken on the floor when the New Year arrives for luck, while talismans in the form of a pomegranate called «gouria» are exchanged during Christmas and New Year. The pomegranate is also closely associated with funerals and weddings.
Despite all that, the fruit itself is not as widely used in Greek traditional cooking as it is in the Middle East, where it is a staple of the kitchen, especially in the form of molasses. Only in later years have chefs been using pomegranates in dishes more often and this salad is very typical of «modern» Greek restaurant cooking. Leafy greens are tossed with a sweet and sour dressing while walnuts and pomegranates give the necessary crunch, adding a nice layer of flavour. This salad has become a favourite of ours and I hope you’ll love it too.

Ξέρω πως τα Χριστούγεννα είναι κοντά, όχι όταν στολίζουμε το δέντρο, αφού αυτό συμβαίνει στις αρχές του Δεκέμβρη, αλλά όταν ξεκινάνε οι προετοιμασίες για τα μελομακάρονα , τους κουραμπιέδες και άλλα βρώσιμα δώρα, αλλά και όταν αρχίζω να χρησιμοποιώ ρόδια στη μαγειρική μου!
Δεν ξέρω για σας, αλλά εγώ τα ρόδια σχεδόν τα ξεχνάω μέχρι να έρθουν τα Χριστούγεννα. Γενικά δεν τα τρώω ποτέ σκέτα, αλλά σε συγκεκριμένες παρασκευές, όπως αυτή η σαλάτα για παράδειγμα, μου αρέσουν ιδιαιτέρως, γιατί δίνουν γευσή και υφή στο πιάτο, ειδικά δε μαζί με τα καρύδια. Η σάλτσα περιέχει πετιμέζι, αλλά μπορείτε να χρησιμοποιήσετε και μελάσα ροδιού, με διαφορετικό βέβαια αποτέλεσμα. Και επειδή η σαλατούλα αυτή έχει γίνει από τις αγαπημένες μας, ελπίζω να βρει θέση και στο δικό σας γιορτινό ή καθημερινό τραπέζι.
Green salad with walnuts, pomegranates and petimezi dressing
INGREDIENTS for 6-8 people
- 300g mixed green leaves
- 1/2 cup walnuts
- 1/2 cup pomegranate seeds
dressing
- 5 tbsp olive oil
- 2 tbsp vinegar
- 1.5 tbsp petimezi or pomegranate molasses (in which case you have to decrease the vinegar to 1 tbsp)
- salt and freshly ground black pepper
DIRECTIONS
- Wash and dry the greens. Cut them in medium sized pieces using your hands and place them in a large bowl.
- Pulse all the dressing ingredients in a blender and pour over the salad. Mix well, season and then transfer everything on a large platter.
- Scatter the pomegranate seeds and walnuts over the salad and serve.
Πράσινη σαλάτα με καρύδια, ρόδι και σάλτσα πετιμεζιού
ΥΛΙΚΑ για 6-8 άτομα
- 300γρ διάφορα σαλατικά (σαλάτα, λόλα, αντίδι, σπανάκι κλπ.)
- 1/2 φλιτζάνι καρυδόψιχα χοντροκοπανισμένη
- 1/2 φλιτζάνι σπόρια ροδιού
σάλτσα
- 5 κ.σ. ελαιόλαδο
- 2 κ.σ. ξύδι
- 1.5 κ.σ. πετιμέζι ή μελάσα ροδιού (αν τη χρησιμοποιήσετε μειώστε το ξύδι στο 1 κ.σ.)
- αλάτι, πιπέρι
ΕΚΤΕΛΕΣΗ
- Πλύνετε καλά τις πρασινάδες και στεγνώστε τις. Κόψτε τις σε μέτρια κομμάτια με το χέρι και ανακατέψτε τις σε ένα μπολ μεγάλο .
- Χτυπήστε τα υλικά της σάλτσας στο μπλέντερ και περιχύστε τη σαλάτα. Ανακατέψτε καλά και αλατοπιπερώστε.
- Απλώστε προσεκτικά τη σαλάτα σε μια μεγάλη πιατέλα και βάλτε από πάνω τα καρύδια και το ρόδι. Σερβίρετε αμέσως.

I totally agree with you about pomegranate being everywhere in Greece, but not seeing them in many dishes. I have tons of pomegranates at my place now after doing this POM Wonderful tasting menu (they sent me 2 cases) and so I’ve been trying to use them up putting them in various dishes. It’s really a versatile fruit – going well in salads, baked goods, meat dishes, etc.
First, love the falling snow effect you’ve added to the blog…festive and second, love salads with pomegranate seeds and even the juice in a dressing. I think we’re having one again for Christmas dinner.
Your salad sounds delicious. I love petimezi (grape molasses) and also use it in my vinaigrettes and have included 2 salads in my cookbook using it.
φάγαμε στην Τουρκία σαλάτα με ξύδι από ρόδι και μετά αγόρασα από το αιγυπτιακό παζάρι έτοιμο ξύδι με χυμό ροδιού και πετιμέζι. Να φανταστείς ακόμα και τα δύσκολα παιδιά μου ενθουσιάζονται. Συνήθως το βάζω πάνω από σκέτη ρόκα γιατί κάνει την αψάδα της πιο ήπια. ΚΑΛΑ ΧΡΙΣΤΟΥΓΕΝΝΑ
