In Greece we call this type of ice cream «kaimaki» and it very typical of 1960’s style confectionery shops selling baklava and kataifi as well as other other types of -usually syrupy- sweets, but the recipe is based on Diana Abu-Jaber’s book The Language of Baklava, which was the previous Cook the Books pick. It is very often served in silver-style bowls and I remember eating it after big meals with the family over ekmek kataifi or with ravani.
I always thought that it tasted of the mastic, but Diana’s recipe revealed another very interesting ingredient: sahlep (we call it salepi in Greek). Sahlep comes from the root of an orchid and apart from its interesting taste it is also a very strong thickening agent, so very little goes a long way (which is fortunate as it costs 98 euro per kilo!). The most interesting attribute of sahlep, however, is that it gives the ice cream in interesting elasticity, typical of kaimaki.
This recipe is perfect for those avoiding egg-based ice cream and it will keep in the freezer for longer. Serve it on its own with sour cherry syrup called vissinada (another traditional Greek combination) and some pistachios.

Το παγωτό καϊμάκι το ξέρετε φαντάζομαι όλοι. Αυτό που πιθανότατα να μην ξέρετε, ή τουλάχιστον που δεν ήξερα εγώ, είναι πως τη μαστιχωτή υφή του δεν την παίρνει από τη…μαστίχα, αλλά από το σαλέπι, τη σκόνη που προέρχεται από τη ρίζα μιας ορχιδέας και είναι ιδιαιτέρως διαδεδομένη στην ανατολή. Το σαλέπι έχει πολύ ιδιαίτερη γεύση, αλλά και σημαντικές πηκτικές ικανότητες. Χρειάζεστε δηλαδή πολύ μικρή ποσότητα. Ευτυχώς βέβαια, γιατί εγώ το βρήκα στην τιμή των 98 ευρώ το κιλο! Είναι πολύ εύκολο να φτιάξετε αυτό το παγωτό που είναι ιδανικό για όσους αποφεύγουν τους κρόκους αβγού. Ταιριάξτε το με ένα ωραίο ραβανί, με εκμέκ καταΐφι, ή απλά απολαύστε το σκέτο με σιρόπι βύσσινο και τριμμένο φυστίκι αιγίνης.
KAIMAKI ice cream
- 1tsp salepi (sahlab) or 1tbsp corn starch
- 2 cups milk
- 2 cups heavy cream
- 1 1/4 cups sugar
- 1/4 tsp mastic powder
- chopped pistachios for decoration
DIRECTIONS
- Dilute salep in 1tbsp cold milk.
- Bring milk, cream and sugar to boil, add salep (I used immersion blender because it would’ t dilute). Stir in mastic and simmer for 15 minutes, stirring contsantly.
- Add the slice of orange rind and remove from heat. Let it cool and place in the fridge. Churn in an ice cream machine.
- Keep in the freezer until needed.

Παγωτό Καϊμάκι (μια συνταγή βασισμένη στο βιβλίο της Diana Abu-Jaber The Language of Baklava)
- 1κ.γ. σαλέπι ή 1 κ.σ. κορν φλάουρ
- 2 φλιτζάνια γάλα
- 2 φλιτζάνια κρέμα γάλακτος 35% λιπαρά
- 1 1/4 φλιτζάνια ζάχαρη κρυσταλλική
- 1/4 κ.γ. σκόνη μαστίχα
ΕΚΤΕΛΕΣΗ
- Διαλύστε το σαλέπι σε 1 κ.σ. κρύο γάλα.
- Σε ένα κατσαρολάκι βάλτε το γάλα, κρέμα γάλακτος και ζάχαρι να βράσουν. Μόλις πάρουν βράση προσθέστε το σαλέπι (εγώ χρειάστηκε είναι αλήθεια να βάλω το μίξερ στο μίγμα για να διαλυθεί καλά το σαλέπι) και τη μαστίχα, χαμηλώστε τη φωτιά και σιγοβράστε για 15 λεπτά περίου ανακατεύοντας συνέχεια.
- Στο τέλος ρίχτε μέσα και τη φλούδα πορτοκαλιού, αφήστε το μίγμα να κρυώσει, σκεπάστε το και βάλτε το στο ψυγείο για τουλάχιστον 3 ώρες να παγώσει καλά.
- Ακολουθώντας τις οδηγίες του κατασκευαστή βάλτε το μίγμα στην παγωτομηχανήγια να παγώσει και έπειτα διατηρήστε το σε δοχείο που κλείνει καλά στην κατάψυξη.

I’ve never worked with salepi and now am very curious to try it. Of course, I have to find it first! The vissinada/pistachio combo really makes this – it’s so pretty (as is your tablecloth) and I can imagine well how it tastes — wonderful!!

Ahhh sahlep…that’s what they put in the ice cream called Ntountourma in Thes/niki and Sth’Poli.

I think ‘dondurma’ is the Turkish word for ice cream. Turkish ice cream is fantastic, because they use really nice fatty milk.

οσο «τριγυριζω» στο food junkie, τοσο κολλαω και παντα ανακαλυπτω κατι δελεαστικο που στο τελος γινεται εθιστικο. Φετος αποφασισια να φτιαξω για πρωτη φορα παγωτο και επεσα στο καϊμακι σου. Βρηκα και σαλεπι(να ‘ναι καλα το μπαχαρ).
Η απορια μου ειναι: να βαλω γαλα εβαπορε ή φρεσκο;
Το εβαπορέ έχει μια σχετικά «δυσάρεστη» γεύση, οπότε είναι καλό να χρησιμοποιήσεις φρέσκο.
