I had a wonderful time at Easter, and don’t worry about not being able to get staka or malaka; I’m sure other cheeses could also substitute, and they would add a different dimension to the taste of pies and pastries. My mother in New Zealand had NONE of those cheeses, but we still ate kreatotourta for Easter (she used to make her own mizithra using fresh milk bought from the milkman – στα παλιά χρόνια που είχαμε τον γαλατά της γειτονιάς)
